Cooking...

What do I LOVE to do in my spare time you ask? Cook! This is one of my passions, I spend hours at home looking through cookbooks I love, love, love the food network channel and spend lots of time combing the Internet for recipes. Just today my husband and I were talking about Valentines Day and I told him I didn't want flowers I wanted a new knife instead (all my paring knives have mysteriously disappeared) he thinks I am a little strange and he wasn't sure about the whole knife thing for a Valentines Present:) My parents got me a new mixer for Christmas, you know, one of those nice upright mixers, I Love IT!! Just today I used it to make a no bake chocolate cheese cake. We won't talk about the nutritional value but it is really good and super easy to make, I'll include the recipe for you just in case you want to try it remember small portions..it's very rich but if you are having a chocolate moment this is for you...





NO BAKE CHOCOLATE CHEESE CAKE







1 graham cracker pie crust



8oz bakers chocolate squares (melted)



2 packages cream cheese (softened)



3/4 cup packed brown sugar



1/4 cup white sugar



2 tablespoons milk



1 teaspoon vanilla





combine all ingredients and mix with a mixer for 3 min. making sure mixture is smooth. Pour into pie crust and refrigerate for 2 hours.

ARCTIC TALE FILMS AND AVOCADO TREES...

So unless you have been in a box somewhere you probably know that here in Kentucky we have had a little bit of weather...a little snow, a little ice, and while the sun was out today a lot of rain...I awoke to the sound of my 2 boys tuning in to our local T.V. station and overwhelmed with joy that school was closed. The only problem with this was my oldest son Chad Allen had an appointment with the neurologist at nine and it has taken a months wait to get him in and now there is ice on the road and we had to cancel..very frustrating especially since I had to pick him up from school yesterday with yet another headache that put him in the bed most of the day, when I spoke to the receptionist on the phone this morning and she was very kind to squeeze him in for February 11th. So now we wait and go from there.
In the mean time what have we been doing around here you ask? Well...Growing an avocado tree of coarse!! See around here my son Chase loves to save the seeds from things to see if we can "grow them" so he had saved a seed from an avocado we had eaten and low and behold after 2 weeks setting in water (with toothpicks stuck in it only the bottom in the water) and 1 week in some good ol' dirt we have started growing an avocado tree, the bad news my son will have to wait 5 to 13 years to see that tree bear any fruit...but any who it's fun to watch it grow and they say they are very pretty house plants. What other FUN and EXCITING (grin) things have we been up to you ask? Well Cassie Marie and I sat down and watched (2 time I've seen it Husband and I watched it a few nights ago) ARCTIC TALE and I'm tell'n ya if you have kids (even if you don't) it's a must see!! It is a National Geographic film and the movie follows the beginning lives of a polar bear cub (named Nanu) and a Walrus pup (named Seela) along the journey from birth to maturity. I think they followed them for eight years and then put the footage together to make the movie, Queen Latifah is the narrator through the movie and I'm tell'n ya I haven't been this excited about a movie in a long time but this is a great family movie the kids loved it! and I enjoyed it so much I have included a little clip from the movie and of coarse a picture of the famous avocado tree....which some how is at the top of my post and not the bottom where it should be. (Carrie, you really must show me how you put your pictures where you want them on the blog...They never go where I want them to!)

Sister...

I couldn't have been more than a few days old when my older sister wanted to give me a kiss on my forehead and as I began to cry my Mother discovered she had left her teeth prints behind...years later she was the one in charge to babysit me lets just say I had a up close and personal look at the inside of a toilet bowl while watching my ponytail swirl in the water as sister threatened to flush me down the commode...once sister and her friend wanted to go to the store near by which required sneaking away from me so I would not fallow them, it also requires jumping an electric fence in the neighbors back yard...they jumped... I didn't I was close lined by the fence and believe me I used that to my advantage when they had to carry me to the house and explain to my Mother what happen...Oh, there are many more stories I could share, like the time my Dad went away to summer camp for the Army Reserve and My sister wanted to back his truck up out of the building and wash it or something ...the problem was she forgot to shut the truck door (duh) and nearly ripped the whole door off the truck, to which I got complete pleasure watching her cry for two solid weeks waiting for Daddy to come home so she could tell him! But then we grew up and had our own children, and became very close, she became my best friend the one I could always run to when I needed someone to talk to, we still had our disagreements but she was always there, today I look up to her so much she has become a strong person where so many others would have crumbled. She is a compassionate loving person that God has so much in store for, she is my soft place to fall and my rock to lean on. She is my number one critic for all my new hair styles, (brutally honest..thanks sis) quick to point out all my grey hair and laugh when I tell her I have retired a pair of jeans I can't fit in anymore...she is my food critic, always pointing out that "that has 1,000 calories in it and it will make your butt big" She is my check book balancer ( I know that sounds odd, but I'm not really good with numbers)
I know that there are some people that aren't close with there siblings, and I feel bad for them, family is very important to us and I can almost assure you there are rarely any days that pass that Melissa and I don't call each other on the phone we talk everyday, I'm not sure what about but, we talk. So I know your reading this Sister (cuz you are my biggest blog fan) and I just wanted to tell you I love you and I'm so proud of you, thank you for all that you are and all that you do!!

5. Skip down the hall Rather Than Walk and see how many looks you get.

6. Order a Diet Water whenever you go out to eat, with a serious face.

7. Specify That Your Drive-through Order Is 'To Go'.

8. Sing Along At The Opera.

9. Five Days In Advance, Tell Your Friends You Can't Attend Their Party Because You have a headache.

10. When The Money Comes Out The ATM, Scream 'I Won! I Won!'

11. When Leaving the Zoo, Start Running towards the Parking lot, Yelling 'Run For Your Lives! They're Loose!'

12. Tell Your Children Over Dinner, 'Due To The Economy, We Are Going To Have To Let One Of You Go.'

There now wasn't that funny!!!

Someone I think you should meet...

I wanted you to know about Abby.

She was adopted from Guatemala. At three years old, she was diagnosed with a high-risk, aggressive form of Leukemia. Certain genetic complications have put her chance of surviving the treatment at about 20%.

I am praying for her and her family. Would you pray for them too?
